Located in the historic Goose Island district, this facility not only offers state-of-the-art equipment but also revives a century-old building that once housed one of the largest furniture distributors in the country. With its grand opening scheduled for February 22, Tailwind promises to fill a gap in Chicago’s coffee community by providing educational opportunities and shared resources.

In the heart of Chicago’s industrial past, Tailwind Roasting Collaborative stands as a beacon for coffee enthusiasts. The renovation of a 1901 building into a modern co-roastery took 18 months, transforming it into a 6,500-square-foot space equipped with cutting-edge technology. This includes four production roasting machines, multiple packaging lines, and ample storage for up to 100,000 pounds of coffee. The facility’s location on Goose Island adds a layer of historical significance, connecting the city’s industrial roots with its growing coffee culture. Sarah Cline Parker, a green coffee expert and educator, spearheaded this project after moving from Colombia in 2016. Recognizing the lack of accessible coffee education in Chicago, she developed Tailwind to address these challenges.

Parker’s vision extends beyond just providing equipment. Tailwind offers membership models and toll roasting services, lowering the barriers to entry for new roasters. Trevor Jermasek, an experienced Pacific Northwest coffee professional, has joined as the first employee to lead roasting programs. The facility also boasts a comprehensive lab with sample roasters, cupping tables, and quality-control equipment, ensuring that members can refine their craft. Classes on cupping, roasting, and green coffee sourcing will be regularly hosted, fostering a collaborative environment where knowledge is freely shared.
