By the 1960s, a resurgence in Chablis sales spurred increased plantings, driven by advancements in frost control, disease prevention through modern pesticides, and the use of fertilizers. However, this growth often came at the expense of wine quality. Vincent, stepping in to work alongside his father in 1976 and taking full charge by 1979, consciously eschewed the prevailing trends of his generation. Since 2002, he has committed to organic and biodynamic principles, not for certifications but out of profound personal conviction. Grapes are gently pressed as whole bunches and fermented in enameled steel tanks, with a small portion in new casks, before aging in both new and old barrels. Sulfur is only added after malolactic fermentation, just before bottling. The Domaine Vincent Dauvissat comprises just over 12 hectares of vines, including a hectare of Petit Chablis on Portlandian limestone soils and over three hectares of village-level Chablis across four parcels, some facing the premier cru Forêts to the northwest. His most significant premier cru holding is 3.7 hectares in Forêts, which he labels 'La Forêt', spread across seven areas within the larger Montmains appellation. Furthermore, he possesses 1.4 hectares in Vaillons, primarily in the Chatains and Beaugnons lieu-dits, where vines planted on deeper marl soils yield robust, 60-year-old fruit. An additional 0.4 hectares in Séchet, planted in 1972, are bottled separately due to thinner soils that produce wines of exceptional finesse and delicacy. On the Right Bank of the Serein, Dauvissat cultivates 0.3 hectares of Montée de Tonnerre, emphasizing its distinct terroir of more pebbly limestone and a southwest exposure. The estate's crown jewel is its 0.8-hectare block of Les Preuses, planted in 1970, situated above the holdings of William Fèvre, offering a south-facing exposure and pebbly marl soils that yield a wine perhaps less powerful but more elegant than Les Clos, consistently among his personal favorites. His most sought-after wine, however, is his 1.4-hectare holding in Les Clos, blending fruit from four parcels to produce one of Chablis's greatest wines. The Dauvissat style is defined by elegance and restraint, offering wines of immense finesse without sacrificing concentration. From the accessible Petit Chablis to the expressive premier crus and the profound grand crus, each wine distinctly reflects its origin.
