A major roundabout project is set to transform the intersection of Valley Road and U.S. Highway 6 in Gypsum, prompting the relocation of several popular food trucks. These mobile eateries will soon find a new temporary home at a municipally owned location near the town's Interstate 70 interchange. This area, previously occupied by the Gypsum Grill before its demolition in 2023, will now serve as a hub for these culinary ventures. However, due to the absence of established power lines, most vendors will need to rely on generators to operate their businesses.
Among the relocating food trucks, Itzy’s Coffee stands out with a unique arrangement. Instead of joining the others at the interchange site, Itzy’s will move to a different municipal property located just north of the Liquor Shop, adjacent to a convenience store. This site offers sufficient electrical infrastructure to support the coffee business and ample space for a drive-through operation along Bertroch Lane. Customers can expect a brief hiatus starting April 25 as Itzy’s transitions to its new location, after which it will reopen its doors to the community.
While these relocations are temporary, plans are underway for a more permanent solution. Town Manager Jeremy Rietmann revealed that discussions are ongoing with a private property owner to establish a "mobile vending court" along Highway 6. Meanwhile, preparations for the roundabout construction are progressing, with an anticipated start date of June 5 and completion by August 18. Despite some challenges, such as higher-than-expected bids and unresolved land acquisitions, Rietmann remains optimistic about the project's progress. Modifications to reduce costs or explore alternative strategies will be discussed at the upcoming Gypsum Town Council meeting on April 22. Through collaboration and adaptability, Gypsum continues to prioritize improvements that benefit both residents and local businesses alike.
