Central to the operation are three key pieces of equipment: a Roest sample roaster, an Arc 800 small-batch roaster, and a Probat P12 full-production roaster. These tools enable the team to source beans primarily from Genuine Origin, Cafe Imports, and Sucafina. Diop categorizes her coffees into three distinct profiles: delicate, nuanced, and bold.
