A vibrant addition to the culinary scene in Champaign-Urbana has arrived in the form of a striking hot pink food truck, Bennets Eggrolls. This mobile eatery serves up an enticing array of options including savory egg rolls, dessert varieties, loaded fries, and smashburgers. Recently spotted at the Home Depot parking lot, this truck offers not just convenience but also a delightful taste experience.
My recent visit to Bennets Eggrolls provided an opportunity to sample their offerings on a chilly day. After placing my order, I was handed a number and waited inside my car due to the inclement weather. The wait time was approximately 20 minutes as the team prepared each item fresh. My selection included four distinct egg rolls—pizza, Philly, veggie, and jerk chicken. Each roll emerged piping hot from the fryer and was notably large in size. Without any identifying marks, each bite was a surprise, especially the Philly roll with its satisfying blend of thinly sliced beef, onions, bell peppers, and gooey provolone. Meanwhile, the pizza roll offered a unique twist with melted cheese and pepperoni, though it lacked the traditional tomato sauce. While the veggie roll was less memorable, the jerk chicken roll stood out with its bold flavors and tender, spicy chicken paired with a crispy wrapper.
This innovative food truck does not adhere to a fixed schedule, often catering to events or offering special Sunday dinners featuring classic comfort foods like chicken, cornbread, macaroni and cheese, baked beans, greens, and banana pudding for dessert. Keeping track of their latest whereabouts can be done by following their Facebook page. Bennets Eggrolls is more than just another food truck; it's a symbol of creativity and passion in the world of street food, proving that even the smallest kitchens can deliver big flavors.
