The investigation, spearheaded by neuroscientist Fabiana Carvalho, delves into the preferences of 238 U.S. specialty coffee enthusiasts. Participants were shown digital images of coffee bags in various colors and saturation levels. Their responses indicate that specific shades evoke distinct flavor anticipations. For instance, pink is linked to sweetness and fruity notes, while yellow suggests higher acidity and citrus flavors. Interestingly, darker tones like brown and black are associated with bitterness and dark roast characteristics. Moreover, the intensity of color plays a crucial role; vibrant hues heighten expectations of robust flavors but may also reduce overall appeal due to perceived over-roasting.

Beyond taste, the study uncovers how packaging colors shape broader conceptual meanings. Black and brown are often tied to commercial products, whereas green conveys organic and eco-friendly attributes. Pink and yellow are seen as modern, and pale blue reflects sophistication. These connections stem from cultural cues and learned associations between colors and tastes.
